In the heart of Burgundy, in the French department of Yonne, lies Fromagerie Le Roux. For over fifty years, this family business has been known for its love of traditional French cheeses. What began in 1973, when Claude and Danièle Le Roux took over a small cheese shop in Cheny, grew into a renowned fromagerie and affineur that today plays an important role in preserving Burgundian cheese heritage.

Burgundian craftsmanship

Knowledge of the craft is passed down from generation to generation. In the early years, the family built its reputation at the local markets of the Yonne. Soon, the ambition arose not only to sell special regional cheeses but also to refine them themselves. The focus was on authentic cheeses from small farmers and artisanal producers in the region.

An important milestone followed in the late 1980s. The Le Roux family decided to dedicate themselves to the preservation of the traditional Soumaintrain, a characterful red-rind cheese whose production had almost completely disappeared. Claude Le Roux went in search of farmers willing to produce the cheese according to old traditions, while he himself further perfected the art of ripening. Thanks to these efforts, the Soumaintrain was preserved for future generations.

From generation to generation

Today, the second generation is at the helm. Pascal Le Roux and his wife Christel took over the family business in 2008 and continue the work of Claude and Danièle. In their ripening cellars, the cheeses are given all the time to develop optimally. Through careful turning, washing, and inspecting, the full flavor and character for which Le Roux cheeses are known are created.

In addition to the famous Soumaintrain IGP, Le Roux also ages other regional specialties, including Chaource AOP and various farmhouse cheeses from Burgundy. The family works with local producers as much as possible and remains true to its philosophy: respect for tradition, attention to quality, and a passion for authentic flavors.

At Fromagerie Le Roux, cheese is not just about taste, but also about history, craftsmanship, and passing on traditions. Every cheese tells the story of Burgundy and of a family that has been dedicated to preserving its rich cheese culture for generations.
