Maison Fischer is located in the picturesque wine town of Beblenheim, situated on the famous Alsace Wine Route. Since 1926, this family business has been known for ripening Munster and other characterful regional cheeses from Alsace. What began as a local family business has grown into one of the most famous names in Alsatian cheese culture.

Almost a century of Alsatian cheese tradition

The history of Maison Fischer begins with Albert Fischer, who developed a passion for cheese alongside his restaurant. That love for the craft was passed down from generation to generation. After Albert, his son Armand Fischer, followed by Yvette Fischer and Robert Mauler, and later Philippe Mauler took over the family business. Today, the company is led by Anne Lang-Mauler and her husband Cyril Lang, who now represent the fifth generation.

Over the years, Maison Fischer has specialized in the aging of Munster AOP, the iconic cheese of Alsace. The cheeses are carefully selected and subsequently aged for several weeks in specially designed maturation cellars. During this process, the cheeses are regularly turned and cared for, allowing them to develop their characteristic soft texture, powerful aroma, and full flavor.

In addition to Munster, Maison Fischer also ages other regional specialties, including Bargkass and artisanal mountain cheeses from the Vosges. In doing so, the company works closely with local dairy farmers and producers, ensuring that the flavors of the region are optimally preserved. Part of the ripening even takes place at a second location in the mountains, where the natural conditions contribute to the unique character of the cheeses.
